  5. This just sent me into raptures. Buche de Noel! Eggnog cakes with buttercream! Winter wonderland! Citrus! I don't even care that I can't eat it with you. Heavenly.

    Maybe you can help me. I heard a wonderful word, once, for the thing a chef or baker does to citrus. You torture it or sever it or striate it, except none of those are right and I can't remember what is.
