Apricots and Plums

Is there a more beautiful fruit? Sadly, these apricots don't taste nearly as good as they look (and this photo is blurry, but trust me, they're stunning).

So with a little sugar, lemon juice and vanilla, some flour, baking soda, baking powder and buttermilk, I turned them into this:

And then I read this

This is Just to Say

I have eaten
the plums
that were in
the icebox

and which
you were probably
saving
for breakfast

Forgive me
they were delicious
so sweet
and so cold

  1. A very fine use of a beautiful fruit that doesn't taste as good as it looks!

  2. I've read a Billy Collins poem that is a tribute to this. Wish I could remember it!

  3. Crumbles, cobblers and pan dowdys are all perfect ways to use fruit that just can't make it on its own...and they always look beautiful, especially with a bit of organic whipped cream. Yummy!

  4. Apricots are lovely but it is rare to find a delicious one. We planted an apricot tree in our La Jolla garden and enjoyed a few years of tree-ripened deliciousness!

  5. Your apricot confection looks wonderful. Texans are big fans of cobblers but we don't grow many apricots out here. Enjoy every bite.

  6. To me, that poem is better than anything, including ice-cold plums. Your cobbler looks terrific.

  7. I love that. A friend saw him lecture, and said his wife's reply to the note was even better, so he read it.

    I think this is it

  8. That looks so delicious! With a bit of cream or ice cream it would be a delightful dessert...just to bad you do not live next door as I might be tapping at your door...

  11. I like apricots, and everything made with them. The poem has rendered them sweet, so sweet I can taste them.

    Peace.
