Hallelujah Cake
It's not terribly pretty, but trust me when I tell you that Hallelujah Cake is about the best dang chocolate cake I've ever made. My Texan friend Johanna gave me the recipe, and I balked at the ingredients and the lack of -- let's say, organization that went into its creation. I've got a bit of southern in me (my maternal grandmother is from the Mississippi Delta), though, and I can completely understand that after dumping all the ingredients together and then mixing it up, you might sing some praises to the Lord.

Hallelujah Cake
Sift together:
2 cups flour
2 cups sugar
1 tsp. baking soda
pinch of salt
Melt together:
1 stick butter
1/2 cup veg oil
6 heaping T unsweetened cocoa (I did use the very best here and not grocery store Hershey's)
1 cup water
Pour melted ingredients into dry ingredients
Add:
1/2 cup buttermilk
2 eggs
1 tsp vanilla extract
Mix well.
Bake at 350 degrees until done.
Icing
1 stick butter, melted
8 heaping T unsweetened cocoa (again, I used good cocoa)
1/3 cup milk
powdered sugar (the amount isn't indicated, but I used 1 box which is about 1 pound or so)
Mix above together and dump on cake. Spread evenly.

ReplyDeleteI've got plenty of good cocoa in the house and been really craving chocolate cake for the past two weeks--- I'm so tempted to make that! Could I limit myself to eating only a tiny sliver at a time? Hmmm... Thank you for posting the recipe. I'll meditate on it. Drooling, probably.

ReplyDeleteMy girls are home for the summer and It is their favorite cake ever. When they were in high school and the house swarming with their friends I would make that cake at least twice a month.
Exact same recipe except I use buttermilk in the icing.
How much is a stick of butter? I want to try this. Thanks for the post!

ReplyDeleteI have a Texas sheet cake that sounds a lot like this recipe and oh it is good! I do like the name of this recipe and I do believe that I need to try this cake. Yum Yum YUM!!!!
ReplyDeleteIMHO Penzey's Natural Cocoa Powder with 24% butterfat is the only substitute for Callebaut or Dagoba.
ReplyDeleteAnd I can hear my hips growing just by reading the recipe which says to me this is a keeper. This is what I will need this week, thanks love.
And to think I used to believe that Hershey's was good cocoa... how wonderful to become educated in these things... I shall make it as soon as I find some very good cocoa.

ReplyDeleteI think that sounds a lot like a cake recipe I have in a 1940's county fair cookbook. I'll have to look it up and check. It's a weird recipe but the BEST!
